Chicken Stir Fry
How to make a delicious chicken stir fry in your cast iron skillet.
Prepare:
2 large raw chicken breasts
1 head of broccoli
1 half of a white onion
1/2 cup sliced white mushrooms
1-2 red peppers (depending on size)
1/2 cup raw sliced almonds
Salt
Pepper
1 tbsp minced garlic
Coconut Oil
Extra Virgin Olive Oil
Step One: Prep the Veggies!
*Have your chicken out on the kitchen counter
Rinse and dry thoroughly all of your fresh produce;
Large dice your red pepper and onion in a bowl, put aside;
Cut all of the broccoli heads from their stems and pick apart into smaller heads into their own bowl, put aside;
Slice your mushrooms a little thicker and cut into half slices into their own bowl, put aside;
Place your sliced almonds in a small bowl, cover evenly with salt and pepper, put aside;
Step Two: Start Cooking the Veggies
Add (1) tbsp of coconut oil to your cast iron skillet and bring to medium-heat;
Add the bowl of peppers and onions to the skillet, making sure they are evenly spread out in the pan;
Let the peppers and onions cook, stirring often, for about 5-10 minutes or until soft & caramelized;
Step Three: Prep your Chicken (while some veggies are cooking)
Rinse your chicken breasts under cold water and pat dry thoroughly;
With a pair of sharp kitchen shears, cut the chicken breasts into medium-sized dice pieces;
Place chicken pieces into a bowl;
Salt and pepper liberally, adding McCormicks Garlic & Herb Seasoning if desired;
Drizzle about 1 tsp of EVOO over the chicken pieces in the bowl;
Mix up all the ingredients until pieces are covered completely, put aside;
Step Four: Continue Cooking the Veggies
Be sure to continue adding about 1/2 tbsp of coconut oil if the cast iron begins to look dry at the bottom or veggies start to stick;
When the peppers and onions look like they are beginning to caramelize, add the bowl of broccoli and stir for about 5 minutes;
The broccoli should begin to soften, if you see any dark burn marks on the broccoli, add more coconut oil to the pan. If the burning continues then lower your heat;
When the broccoli appears to have softened, add the mushroom and minced garlic and stir often for about 5 minutes;
Step Five: Roast your Almonds
In a small pan, place your seasoned almonds on medium-low heat;
Stir frequently until almonds look light-medium brown;
Remove from heat and when the vegetables are finished, add the almonds to the cast iron skillet and stir consistenly;
When complete, remove your vegetables from the cast iron and into a covered bowl (keeping the stove on);
Set aside in a warm place;
Step Six: Cook your Chicken
Drizzle roughly 1 tsp of EVOO onto the bottom of the cast iron skillet;
Bring to medium heat;
Evenly place your chicken pieces in the bottom of the cast iron skillet;
Let sit for 2-3 minutes or until bottoms are light brown sides begin to cook;
Begin stirring frequently, being sure to get up any remaining fond left over from cooking;
When complete, turn stove heat to low and stir back in your vegetables into the skillet with the cooked chicken;
Once dish is fully mixed together, turn off stove heat and let sit for 2-3 minutes;
You are all finished and ready to serve!
(If not using a cast iron skillet, add cooked chicken into bowl from hot pan and stir in with vegetables)
