Homemade Banana Bread
Prepare:
Preheat Oven to 350 degrees
Pull out (1) Stick of Butter from Refrigerator to get to room temperature (unless already available)
Get your ingredients:
3 Eggs;
1 Cup of Coconut Oil;
2 Cups of Sugar;
2 Cups of Smashed Bananas; Roughly 4-5 Medium Size Bananas. Mom likes them when they are all dark brown and close to being rotted! She says that’s when they are the most sugary and delicious.
3 Cups of Flour;
1 TSP of Salt;
3 TSP of Cinnamon;
3 TSP of Vanilla Extract;
1 Cup of Chopped Nuts; (I personally skip this part)
“you can adjust that a lot, maybe less sugar, 1 cup sugar 1 cup apple sauce”
Make the Batter:
Mix all ingredients together.
Using an 8″ x 8″ pyrex, coat inside with cooking spray or butter.
Fill Pyrex with batter.
*For added crunchy texture on top, sprinkle sugar on top before putting into oven!
Cook:
Bake on 350 degrees for approximately 45 minutes to 1 hour (depending on oven)
Check bread by sticking tooth pick in the middle, if more batter comes out then put back in oven until complete.
*Note: if center of bread is not baking evenly, try adding a tin foil cover and put back into oven. This will provide more even cooking.
When bread is completely done baking, pull out of over and cover top completely with tin foil (if not already). This will trap all the good moisture and allow that top layer of crunchy-sugary goodness to become sticky.
Serve:
Wait approx 10-15 minutes to cut & serve with butter.
Cover leftovers with wrap and do not refrigerate.
Now, we need to figure out the recipe for the glaze mom adds on top!!! Brown sugar, butter and such.
